Ingredients
1 pound organic sweet potatoes, cut into 1/2-inch thick rounds
3 tablespoons Terra Delyssa Garlic-infused Organic Extra Virgin Olive Oil, divided
2 tablespoons roughly chopped fresh cilantro, stems removed
2 tablespoons roughly chopped fresh chives
sea salt and freshly ground black pepper, to taste
red pepper flakes, to taste, optional

Instructions
Preheat the oven to 425ºF.

In a large bowl toss the sweet potato rounds with 1 tablespoon of the Terra Delyssa Garlic-infused Organic Extra Virgin Olive Oil, sprinkle with sea salt and black pepper, to taste.
